DIY Naked sponge wedding cake

This week I attempted to make my own wedding cake. It was a trial run to make sure I haven’t lost my ability to bake and also to see if it would collapse into a giant heap of squished sponge.

I used Mary Berry’s all-in-one Victoria Sponge cake recipe which is really easy, if you have the correct sized tins. I knew I wanted to do two tiers and one was 7″ so that was easy, the recipe easily adapts to that. However the bottom tier was 9 1/2″ and I could not work out how to increase the size of the recipe. Maybe I’m an idiot, but I didn’t want to risk just upping the ingredients by a few. So I decided I’d go with 6 eggs and weigh them. Using their weight in shells, 345g, I used the same amount in self-raising flour, Stork (marg) and caster sugar. Now, how much baking powder?! Panic set in, my Google-fu was lost and I didn’t know what to do. Hell, I thought, lets just go with 3 teaspoons and see if that works.

So with the small one in the oven I prepared the bottom one. I keep poking my nose into the oven door to see how it was doing and my heart sunk when I saw the middle of the sponges not rising. Another quick Google and a call to my partners Nan didn’t result in any answers. Had I opened the oven door? No. Was the oven too hot? I don’t know, I’ve never baked it in before. I took them out and let them cool and turned them out so their bottoms would become the top, middle sinking disaster averted.

The large one went in and did the exact same thing. The ingredients were weighed out using a different method, so I think it must be something else affecting the drooping centres. Any ideas?

By this point the kitchen is a right state already and I hadn’t even started on the two different icings. I whipped up a passion fruit layer using mascarpone and fromage frais and then a white chocolate buttercream with raspberry jam. Making white chocolate buttercream meant lots of spoon licking; it’s just simply amazing.

I was so scared to assemble them! I cut up straws (some thicker ones from IKEA) and put them in the bottom tier. I put the top tier on a thin base and plopped it on top. My bottom tier was a bit damaged at the back where I’d taken it out of the tin too early but by some miracle it stayed put!

Now to the taste test. My parent’s popped over as they couldn’t resist the offer of cake (even though my mum bakes all the time). The passion fruit wasn’t a hit, is it just me that absolutely loves the taste? But the sponge, using the 8oz recipe, tasted amazing! The white chocolate and raspberry cake everyone loved. However I found the sponge a bit drier and more crumbly on this one.

Okay, so I can bake and it didn’t collapse. But there is no way I going to put this amount of stress on myself the day before my wedding! I think I nearly flipped out when the cakes wouldn’t rise properly in the middle. Who needs this sort of stress when you can buy a cake or get someone else to do it? So after lots of research previously on alternative wedding cake ideas I think I quite like the idea of lots of mini cupcakes and one single cake with a pretty topper.

Wildwood restaurant Salisbury

Earlier this week I stood in the middle of Salisbury’s market place and felt my tummy grumble. There are lots of places to eat in Salisbury especially around the market. I wanted to go to Leonardos Pizzeria but it was all shut up. I was really craving pizza by this point but I’d had a bad experience at Ask in Salisbury before so we headed to Wildwood. I didn’t realise it was a chain but looking at their website they have a few dotted around the country.

What drew me in was they were advertising 25% off which is always helpful, especially with a wedding to save for and a spending ban. We ordered our drinks (water for me) and settled in with some rosemary and garlic bread. I love bread and this tasted wonderful. It’s definitely enough to share between two with three bits each.

I ordered a lasagne as I wasn’t feeling great and wanted my ultimate comfort food. I was surprised it didn’t get served with anything else like a small salad or garlic bread, but to be fair, I wouldn’t eat the salad and I’d already had bread, so I was very happy. It came to the table sizzling on a wooden board. I am so not over food being served on a board, I like it. Simon had a Giganti Meat which looked amazing! I was very jealous and sneaked a few pieces off his plate. It wasn’t overloading with toppings, it was just enough. The base was really thin and the crust had a nice crunch to it.

The service was very friendly although a little on the slow side; we weren’t in a rush so this didn’t bother us in the slightest. I had a peak at the upstairs and there’s a beautiful private dining room and some booths. No one was sitting upstairs during our lunchtime visit but I expect it gets used on a busy evening. The decor throughout is modern but really quite cosy. I loved the lighting and the different types of seating around the restaurant. I’ll definitely be going back to try a pizza or risotto.

Bridal makeup look

I’m going to hold my hand up and say I’m a bit rubbish when it comes to makeup. I’m definitely no beauty blogger and I don’t claim to know lots about makeup, even if I do have a lot! I really didn’t want to do my own bridal makeup for my wedding but I can’t fork out hundreds for hair and makeup unfortunately. Does anyone want to do it for me??

Getting the base right

I know I want a very natural makeup look as I don’t tend to wear too much normally, so I don’t want to look completely different on my wedding day. I want brown eyeliner and eyeshadows, barely there lip colour and no fake lashes. I also want something really low maintenance. I’ve done some reading up and YouTube watching for foundation ideas and I want to try Estee Lauder Double Wear Light, Nars Sheer Glow and Bobbi Brown Foundation Stick. I already had Double Wear light as a tester so that’s what I’ve gone with today.

I’ve been battling for years to cover the redness in my cheeks and over the last couple of weeks I’ve decided I don’t have to. I use a little bit of foundation and then a rosy blush to cover the redness underneath. Surely I should be happy I have redness, it’s like a natural blusher! That makes a hell of a lot more sense than painting on foundation to cover it, then putting on blusher to bring it back. Lesson learnt, it only took years!

Eyes

For my eyes I used my go to Maybelline Color Tattoo in Creamy Beige, which is the perfect base. I then used a few colours from the Naked 3 palette on top. I used Urban Decay 24/7 glide on eyeliner in Rockstar – I can’t describe it, maybe it’s an aubergine sort of colour. So it’s not really brown but I really like it and found it hidden away in my stash. I’m wondering how waterproof it is though? Any recommendations for a good waterproof pencil eyeliner?

You may kiss the bride

My mum bought me this watermelon lip gloss from Clinique and the first time I wore it I knew I wanted to wear it on my wedding day. It just lasted for hours and that’s exactly what I need.

I can’t wait to give Bobbi Brown and Nars foundation a go and see what they’re like. And then next up is deciding what to do with my very messy hair! What do you think? Am I going to make a complete nervous mess out of my makeup or can I pull it off? I have a fantastic photographer so I hope she can work some magic.

Watersmeet National Trust waterfall

I used to think that National Trust membership was only for those over a certain age with children and grandchildren. But I’m been completely converted. I love visiting National Trust places. It’s not just old houses, there’s places to walk, nature, beaches and so much more. There are a few that are my absolute favourites but Watersmeet will always have a special place in my heart as it’s where I got engaged last year. There’s a little cafe at the bottom of the river and you can walk up to the top to get a good view of the waterfall. It’s beautiful there and I can’t wait to revisit it.

1. Free days out

Free if you have membership anyway. It means that we can go on day trips and explore new places and learn a bit about the venue without forking out on an entrance fee. We go to lots each year so we definitely cover the membership costs. We have a few near us which are perfect for summer picnics, but also when we visit the in-laws there are many NT places to take the family. My favourite so far is Stourhead which has the most beautiful grounds and I’m in love with it. It’s a good walk as well.

2. Food

I love a good cafe and the National Trust ones seem to always be amazing. When out and about what more could I want than a cream tea or a fresh bowl of soup. I like being able to grab a snack or have a full meal with family there.

3. Gift shop

What’s not to love about a gift shop? My closest one sells flour from the mill. I bought quite a few Christmas decorations from there last year and often pick bits up in the sale for the garden.

4. Events

I’m quite close to Mottisfont which often has exhibitions on. Recently they had lots of rare artwork by E.H. Shepard of Winnie the Pooh which was amazing to see. We also stop by Hinton Ampner whenever they have the Spitfire Sisters performing. There’s always something going on for adults and kids and it’s what keeps me going back.

5. Picnics

Okay so for us this is pretty much what most of our local National Trust places are for. We pack up our hamper, a picnic rug and a blanket (for when it’s a bit nippy, it is Britain after all) and head off to somewhere like The Vyne where we can have a wonderful picnic by the lake and just relax all afternoon. We see old couples having a natter or whole families sitting around enjoying each others company. It’s just a great place to escape from the hustle and bustle.

Strawberry Shloer jelly

I adore strawberries and when I heard that Shloer had a limited edition strawberry punch drink I had to try it. I’m addicted to Shloer as a non-alcoholic alternative. However, it’s taken me months to get hold of this as at first it was only available in Waitrose (and not any of the three stores near me) and then it was just never available. I’ve finally got hold of it, obviously, so I decided to make a strawberry Shloer jelly with it – and drink it, yum!

My mum brought over lots of strawberries and I had no idea what to do with them so jelly seemed like the best option – as well as a smoothie. I used Hartley’s strawberry jelly cubes to make this as it’s just so easy. For the amount of water it suggested, I used half boiling water and half Shloer – it makes it all bubbly!

To serve two I used half the pack of Hartley’s and halved the recipe on the back. Instead of cold water I used Shloer, simple. I added lots of strawberries to a bowl and covered it with the jelly mixture, then popped it into the fridge for about 4-5 hours. A large dollop of ice cream on top finishes it off perfectly. It has strawberries in it, that makes it healthy, right?

I like experimenting in the kitchen, especially with the warmer weather trying different desserts. When I worked part time I had plenty of time for cooking and baking but now I don’t and it makes me sad. Need to get back in the kitchen!

Last month in the update I mentioned I’d started the Couch 2 5K program and this month I’ve finished it and completed my first parkrun. I’m now two parkruns down and I am loving it. Actually, I’m running along thinking why on earth am I doing this to myself, but when I get to the end I feel so happy that I pushed myself through. My time has also been getting better with a couple of runs during the week too. As I said in the C25K post I’ve signed up for a 10km race in the New Forest in September which seemed like such a good idea at the time!

This month I’ve been able to spend a bit more time with family. I think the weather definitely helps as you get out more and have BBQs. With my parents we visited Abbotsbury Swannery and had a wonderful day out in Dorset. There’s nothing better than surrounding yourself with the people you love. My step dad also built us a wonderful picnic bench for the garden which is amazing and I’m so grateful for. We bought a parasol and now I want to make some matching cushions.

Tomorrow will be 100 days until our wedding so I am cacking myself at all the things left to do. We got our musician sorted this month and I posted the save the date postcards we made.

Monthly favourites

I did quite a bit of Primark buying this month but I thought you might be tired of endless Primark hauls. But my favourite piece has got to be this backpack which has been so useful. When we go walking in the New Forest or out and about where I don’t want a bag hurting my shoulder, I find a backpack evens things out and I don’t hurt myself. I also wanted something I could screw up and take to the swimming pool (I’ve started swimming – I’m still getting over my fear of public swimming pools. It wasn’t helped by reading in the news recently that you get red eyes not by chlorine but by sweat and urine binds with the chlorine… yuk).

As I went through a veggie week, Life Outside of London dropped wheat from her diet. The food looked delicious and I completely agree that you should take baby steps when it comes to changing your diet.

Since I’ve started running I’ve been on the hunt for tips and plans to improve my time and technique. I stumbled upon Charlie’s blog called The Runner Beans and have been avidly reading the archives for all tricks I need. She is such an inspiration and reading her advice and experience of races has kept me going over the last couple of weeks.

I love cake but I hate icing, marzipan and fruit cake. For our wedding cake I was adamant I wanted a naked sponge cake with different flavoured buttercream layers. Simple, pretty and delicious. Then the quotes started coming in and I was in for a bit of a shock at how much cakes actually cost. My mum makes sponge cakes ALL THE TIME. I see how quick and easy she puts them together and although I know that wedding cakes involve ingredients, time, delivery and profit, I can’t justify in my mind spending so much money on it.

I keep reading that the cutting of the cake is a tradition I shouldn’t miss. Along with the first dance, which I am skipping. So why shouldn’t I skip the cake too? I can’t. I love cake too much! So I’ve been coming up with some other ideas.

Homemade cake

I’ve made sponge cakes before so it can’t be too hard. The difficult bit is going to be the assembly of them and YouTube seems to be a wealth of knowledge when it comes to how to insert dowels and stack cakes. I also learnt today that I can use thick straws instead of dowels which I already have – score. I’m going to give this a go soon and then I’ll take a cake into work and so will Simon, so at least our colleagues will be happy (that’s if I haven’t poisoned them).

One-tier cake

This will either be much much cheaper from a professional cake maker or you could do it yourself. You can have one spectacular looking cake and then have a tray bake out back to serve up.

Cupcakes

You could have a cupcake tower with a small cake or a giant cupcake on the top. I found acrylic stands on ebay which would be perfect for this as they have a flat top tier unlike most cake stands. You could also have your one-tier cake on a stand with cupcakes surrounding it on the table.

Shop bought

So many supermarkets do wedding cakes now so it’s worth having a look and comparing the prices.

Cheese

I’ve seen towers of cheese all over Pinterest and you can even buy them from Marks and Spencer and Waitrose ready done. This is great especially if you feel like you’ve had far too much sweet stuff after pudding. Also, you could include it in an evening buffet with some crackers.

Alternatives

Macaron towers, meringue kisses, cake pops, doughnuts, pancakes, profiteroles, brownies, rice krispies.. the list is as endless as your imagination.

In the next couple of weeks I’m going to get my straws out and see how hard this cake stacking malarky is. That’s if my cakes are edible, not burnt, risen and so on. I hope it’s in the gene, like mother like daughter. Fingers crossed!
