Rhubarb and custard traybake recipe

One evening I was doing my usual of catching up on YouTube subscriptions when I found one by Waitrose for a rhubarb and custard traybake. I only recently discovered that I like rhubarb when I had it in a crumble. I watched the video and this recipe looked super easy so I just had to try it. I mean, this has custard in the traybake, how amazing is that?!

I followed the instructions apart from adding a little more custard to loosen up the mixture before putting into the tray. Next time I make it (which will probably be soon) I won’t bake the rhubarb for as long with the sugar and I’ll put a few on top of the mixture too.

These tasted soooo good! But are really quite unhealthy – they have a whole block of butter in them for a start. I’ve been sharing them out, but my man ate four slices just after I baked them! According to Waitrose that’s about 1400 calories! They are a delicious treat and how can you resist gorgeous vanilla custard.

What have you been baking recently?

Instagram – This month I have been loving seeing Lucy Ledger‘s shabby chic photos. I’d love to have a cottage like this, it’s perfect and beautiful, but I expect I’d mess it up in no time. Seeing her photos pop up in Instagram fills me with warmth, they’re like little digital hugs.

Music – One of our local cafe slash lounge bar Butters often has live music playing. We’ve been a few times now and really enjoyed Amy Baker. The first time we saw her I bought her album and it’s all I’ve been listening to in the car. She does a variety of music but my favourites are the vintage classics like I got Rhythm, Diamonds are a Girls Best Friend and Get Happy.

Tea – My favourite go to tea this month has been a jasmine tea called China Jasmine by T2. It’s a blend of green tea and jasmine blossoms, which I find a lot tastier than plain green tea. I also used my new teapot from Sainsburys which I found in their sale. I don’t know if they brought these out specifically for Chinese New Year, but they may still be in stores reduced. I didn’t buy matching little mugs, so I used an egg cup because why the hell not. The colour matched, ish.

Moment – It’s been a rough month to be honest, I’ve been quite stressed. So getting away for a day walking by the sea was the perfect cure. We went to Hengistbury Head last weekend and although we were frozen it was a beautiful day.

Stationary – I feel like I haven’t bought any stationary this month. I know it’s a shorter month and I’m trying to save for the wedding, but I usually buy something. I’ve been lusting over the mint bloom Filofax but I cannot justify yet another diary!

Hengistbury Head HM Coastguard

Last weekend we drove down to Hengistbury Head which I’ve heard is the best place to take your dog to the beach. I don’t have a dog, but that’s not going to stop me surrounding myself with them. There were hundreds!! Okay, dogs weren’t the reason we headed down there, but it makes a definite plus point. Hengistbury Head is near Christchurch and Bournemouth and is a local nature reserve. At the time I didn’t realise, but you can see the Needles on the Isle of Wight from the top of the hill.

It was a lovely sunny morning but oh my gosh the wind was freezing – at one point I used my scarf over my head feeling a bit like Dorothy from Postman Pat. I didn’t look like that, but it’s what popped into my head as I wore it. We walked up past Quarry Pond and bumped into a work colleague along the way, which was weird as we were over an hour away from home. I always find I bump into people I know while out and about, I’ve even bumped into friends while abroad.

I really wish we’d taken sandwiches as even in the middle of winter the cafes were rammed with people and their pooches. There were plenty of benches on the route to stop and eat with beautiful views. I can’t wait to come here again when it’s a little bit warmer. What’s your favourite local beach?

Breeds, The Wrong Knickers and Wedding Flowers

It’s been another month where I don’t feel like I’ve had time to sit down with a good book and relax. It’s been a rather stressful month and the one thing I should have made time to do was read. I’ve started reading in my lunch break at work which gives me a screen break and some space from everything around me. I block out all of the office sounds and focus on the characters at hand.

I saw a few tweets going round about Bryony Gordon’s The Wrong Knickers and after reading the blurb I was desperate to read it. Luckily I stumbled upon it in my local library so I’m reading it now. I’m only about a quarter of the way through and I’ve found it hilarious – so much so I embarrass myself by bursting out in laughter at work in a rather serious office. A lot of it so far I can’t relate to, but I still find it funny.

Paula Pryke Wedding Flowers

This fabulous Wedding Flowers book by Paula Pryke I won in a Twitter competition and I am in love with it. We’re looking to get married this autumn and I don’t know the first thing about flowers so this has been really helpful. The photography is beautiful and it gives you ideas on wedding themes, decorations and what flowers are best for your season. It has given me so much inspiration.

I don’t think I’ve ever been in love with a book as I am with Breeds. My fiancé bought this for me for Christmas and it was my favourite present; I think I even squealed with excitement. I have wanted a dog since I was tiny and I still don’t have one. We bought a house five months ago and although I work full time, I’m close enough to home to pop in. So I am now researching like crazy about what breed will be best for us. This book isn’t great for research but it’s kept me entertained. It has lots of different breeds and wonderful illustrations of them with a funny, yet precise, description.

I’m also STILL reading The Christmas Surprise by Jenny Colgan – it is really good but I need a day off to finish it. Does anyone else go to the library? My local isn’t perfect, but it has a good selection and does get in some new releases. What are you reading at the moment?

Banana ice cream

There are always overripe bananas in my kitchen because I buy too many and I neglect to eat them until it’s too late. My go to recipe is Mary Berry’s banana loaf, which is fabulous and really easy to make. But it’s time to expand my banana recipe repertoire, so I’ve found a few new faves to run to in times of banana related need.

No.1 Banana ice cream

overripe-banana-ice-cream

Banana ice cream is so easy, I don’t know why I’ve never done it before. Slice up a few banana and pop them in the freezer. When you want some ice cream, pop them in the blender with a some milk, I used about a tablespoon for each banana, and then blend. It takes awhile, and I used the ice setting, but if you push down the sides and keep at it it turns into a lovely creamy consistency. You can eat it there and then or pop it back in the freezer. I love my new bowls and scope too from Sainsburys!

No.2 Banana bread in a mug

I adore banana bread and it’s my go to recipe when we have leftover bananas. My parents bought me this cake in a mug cup for Christmas which has a chocolate cake recipe inside. One day working from home I really really wanted cake so this seemed like the perfect solution. It also meant I didn’t have to share!

No.3 Banana and Nutella Hot Pockets

banana and nutella hot pocket

It’s only been a week since World Nutella Day, but this banana and nutella hot pocket recipe is back on the blog today as it’s such an easy recipe to do when you have excess bananas, and oh my gosh it’s delicious.

No.4 Banana Milkshake

Ripe Banana Milkshake

I don’t think I’ve had a milkshake since I was a kid when I was taken to Maccy D’s, but I love them, however bad they are for you. Although, can this really be bad when it has so few ingredients and tastes just as delicious? It’s one banana, 2-4 ice cubes (mine were tiny so I used 4), a pinch of cinnamon, 250ml lactofree dairy drink (milk!) and two teaspoons of granulated sugar. You could easily use almond milk instead which would make it much healthier. I use bananas all the time in smoothies and can’t believe I’d never thought of this until a recent McDonalds craving.

Buffy

I spent my teenage years watching Buffy the Vampire Slayer and every few years I go back and watch the boxset. I am absolutely gutted that this time around I can’t find disc one of season 4 – the one where they start college. There was some real teenage angst going on in the house while I turned it upside down looking for it with no luck.

In those slightly awkward years growing up, a few too many years ago than I’d like to remember, I looked up to Buffy as a role model of sorts. I even remember writing into a teen mag to say how I looked up to her – how embarrassing is that?! But as a bit of a geek in school, I felt like I fit in with the scooby gang. Anyway, down to my top 10 things I learnt from watching far too much sci-fi in school.

Buffy

1. Accept your friends for who they are. Whether they are a key, a witch, a werewolf or a vampire, you need to look for the good in people instead of judging the differences.

2. You can’t always do it alone. I’m awful at this and try to take on everything myself, but I’ve realised I can’t cope taking on the world myself and that I need my friends and family to support me. Buffy had Willow, Giles and Xander always there for her. It’s okay to ask for help.

3. Sometimes people change. Spike was the twisted evil vampire at the beginning and then Buffy has a love hate relationship with him throughout the series. But in the end he sacrifices his own life to save not only her, but the world.

4. Good people are capable of doing bad things. Willow is so sweet and friendly throughout most of the series, but evil Willow did some very bad things. Good people can do bad things, whether they mean to or not. We still love Willow even after nearly destroying the world. Bad people are capable of doing good things too.

5. Demons can be beaten. Buffy and the gang face so many demons and defeat them all working as a team. They always find a way to win. If I took anything away from Buffy it was that I can get through anything life throws at me. I made need support along the way just like she did, but I’ll get there.

6. Trust your instincts. Buffy thought there was something wrong with Kathy the moment they met. From her weird toenail clippings to her love of Cher. If your gut says she’s evil, trust it!

7. Woman can kick ass.  Buffy, Faith, Kendra, Willow and all the potentials. They could kick serious butt.

8. Sometimes a musical just makes everything better. Enough said.

9. You can’t run from your troubles. When Buffy sends Angel to hell she ran away and took the name Anne. She finds other demons there so it hasn’t solved the issue. You can’t just run away, you need to deal with the problem and fix it one way or another.

10.  There are some things you just don’t want to know about your parents. Do you remember the Band Candy episode? Really don’t want to hear about parental shenanigans!

I really want to create as much as I can for my wedding myself, so I’ve been hunting the web for some origami inspiration. I’ve been recently trying out some origami flowers and I definitely hope I can make my own bouquet like the one below, which does comes with instructions. I absolutely love the idea for name place holders and all the wonderful decorations you could use. Once I’ve chosen a venue I’m getting my creative juices flowing – in the form of a pot of tea and a sketchbook.
