One evening I was doing my usual of catching up on YouTube subscriptions when I found one by Waitrose for a rhubarb and custard traybake. I only recently discovered that I like rhubarb when I had it in a crumble. I watched the video and this recipe looked super easy so I just had to try it. I mean, this has custard in the traybake, how amazing is that?!
I followed the instructions apart from adding a little more custard to loosen up the mixture before putting into the tray. Next time I make it (which will probably be soon) I won’t bake the rhubarb for as long with the sugar and I’ll put a few on top of the mixture too.
These tasted soooo good! But are really quite unhealthy – they have a whole block of butter in them for a start. I’ve been sharing them out, but my man ate four slices just after I baked them! According to Waitrose that’s about 1400 calories! They are a delicious treat and how can you resist gorgeous vanilla custard.
